Ingredients

  • 4 ripe persimmons
  • 350 g vodka
  • 200 g sugar
  • 100 g water
  • 1 star anise

Instructions

  1. Prepare the Persimmons:
Peel the persimmons and cut them into small pieces. Place the fruit in a glass jar.
  2. Infuse the Flavor:
Add the vodka and the star anise to the jar, then seal it tightly. Store in a cool, shaded spot for 1 week.
  3. Make the Syrup:
After 1 week, bring the water and sugar to a simmer just until the sugar dissolves. Remove from heat and allow it to cool completely.
  4. Combine and Wait:
Once cooled, add the syrup to the jar with the persimmons and vodka. Seal and let it rest for 1 more day.
  5. Strain and Adjust:
The next day, strain the mixture through a fine sieve into a bowl. Taste and adjust sweetness or strength by adding more sugar or vodka if desired.
  6. Store:
Transfer your liqueur into sterilized glass bottles and keep it in a cool place.
