Ingredients for the Filling

  • 500 g pasta for pastitsio
  • 200 g feta cheese, crumbled
  • 100 g melting cheese of your choice
  • 2 eggs, beaten
  • Salt
  • Pepper
  • Nutmeg
  • 3 tablespoons olive oil

Preparation for the Filling

  1. In a large pot, bring salted water to a boil over high heat.
  2. Add the pasta and cook for 10–15 minutes until slightly firm (as it will bake further in the oven).
  3. Drain the pasta and place it in a large mixing bowl.
  4. Add the beaten eggs, cheeses, nutmeg, pepper, a pinch of salt, and olive oil.
  5. Mix well to combine all ingredients and set aside.

  • 500 g all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon vinegar
  • 100 g olive oil
  • 150 g water

Preparation for the Phyllo Dough

  1. In a mixing bowl, add the flour and make a well in the center.
  2. Add the vinegar, salt, and olive oil into the well.
  3. Mix with your hands, ensuring the oil is evenly distributed throughout the flour.
  4. Gradually add water while kneading until a soft, non-sticky dough forms.
  5. If the dough is too sticky, add a bit more flour. Divide the dough into 4 portions.
  6. Roll out each portion on a floured surface into thin sheets.

Assembling the Pie

  1. Preheat the oven to 170–180°C (340–355°F).
  2. Lightly grease a baking tray with olive oil.
  3. Place the first phyllo sheet into the tray, brushing it lightly with olive oil. Repeat with the second sheet.
  4. Spread the pasta mixture evenly over the layered phyllo sheets.
  5. Cover the filling with the remaining two phyllo sheets, layering and brushing with olive oil as before.
  6. Finish by brushing olive oil over the top sheet.
  7. Bake for approximately 60 minutes or until the pie is golden brown and cooked through.
