Ingredients for the Dough
- 500 g flour
- 300 g lukewarm water
- 1 packet dry yeast

- 1 tbsp capers
- 10 pitted olives, quartered

- 100 g feta cheese, crumbled

Preparation for the Filling
- In a large skillet, heat the olive oil over medium heat and sauté the onions, garlic, and leek until softened.
- Add salt, dill, pepper, capers, and olives. Continue cooking for another 5 minutes.
- Remove from heat, stir in the feta cheese, and mix well. Let the filling cool completely.
Preparation for the Dough
- Boil the potato, mash it with a tablespoon of olive oil, and let it cool.
- In a mixing bowl, combine the flour, yeast, sugar, and salt.
- Make a well in the center and add the cooled potato puree. Gradually add the water while kneading until you form a soft, uniform dough.
- Cover the dough with a towel and let it rise until doubled in size.
Assembly and Baking
- Preheat the oven to 180–190°C (355–375°F).
- Grease a baking pan with olive oil. Divide the dough into two portions and roll out into sheets.
- Place the first sheet in the baking pan, add the filling, and spread it evenly.
- Cover with the second sheet of dough and drizzle with olive oil.
- Bake for 30–35 minutes, or until the crust is golden and cooked through.
