Ingredients for the Dough
- 100 g butter, melted and slightly warm
- 100 g olive oil
- 10 g sugar
- 1 packet dry yeast (10 g)
- 600 g all-purpose flour
- 400 g lukewarm water
- A pinch of salt
- White and black sesame seeds for topping
Ingredients for the Filling
- 700 g spinach
- 2 leeks
- 5 fresh green onions
- 1 bunch of dill
- 1 bunch of parsley
- 150 g feta cheese, crumbled
- Salt
- Pepper
- Olive oil
Preparation for the Vegetables
- Wash the spinach, leeks, green onions, dill, and parsley thoroughly. Chop them finely and place them in a large bowl.
- Add salt, pepper, a drizzle of olive oil, and the crumbled feta cheese. Mix well to combine and set aside.
Preparation for the Dough
- In a bowl, mix the lukewarm water, yeast, sugar, and salt. Stir and let it sit for 10 minutes to activate the yeast.
- Gradually add the flour while kneading until you form a soft, non-sticky dough.
- Cover the dough with a kitchen towel and let it rest for about 30 minutes.
- Meanwhile, in another bowl, combine the olive oil and melted butter and set aside.
- Once the dough has rested, shape it into a long log and cut it into equal pieces.
- Roll each piece into a small log, place them in the bowl with the butter and olive oil mixture, and let them soak for about 15 minutes.
Assembling the Pie
- Take one piece of dough and, on a cutting board, stretch it out into a rectangular sheet using your fingers.
- Place some of the filling along one edge of the sheet and roll it up tightly into a long rope.
- Coil the rolled dough into a snail shape and place it in the center of a greased baking pan.
- Repeat with the remaining dough and filling, arranging each piece around the center until the pan is filled.
Baking
- Preheat the oven to 170–180°C (340–356°F).
- Sprinkle sesame seeds on top of the pie for decoration.
- Bake for 30–35 minutes or until the pie turns golden brown and crispy.
