Ingredients for the Filling

  • 1 kg spinach
  • 1 medium onion, finely chopped
  • 4 spring onions, finely chopped
  • 1 small leek, finely chopped
  • 1 bunch dill, finely chopped
  • 1 bunch parsley, finely chopped
  • Salt
  • Pepper
  • 150 g feta cheese, crumbled
  • 60 g rice (to absorb excess moisture)
  • Olive oil

Instructions for the Filling

  1. Wash the spinach and herbs thoroughly and finely chop them into a large bowl.
  2. Heat olive oil in a large pan and sauté the onion and spring onions for 3–4 minutes.
  3. Add the spinach and herbs, stirring until well wilted (about 6–8 minutes).
  4. Season with salt, pepper, and add the rice. Mix everything well, turn off the heat, and let the mixture cool.
  5. Once cooled, mix in the crumbled feta cheese.

Ingredients for the Dough

  • 1 kg all-purpose flour
  • 300 g olive oil
  • Salt
  • 200 g water

Instructions for the Dough

  1. In a bowl, combine the flour, olive oil, and salt. Gradually add the water while kneading until you form a firm dough.
  2. Divide the dough into small balls and place them on a tray. Let them rest for about 1 hour.
  3. Roll out each ball into small circles using a rolling pin.
  4. Place a spoonful of the filling in the center of each circle. Fold the dough over the filling to form a semicircle and press the edges with a fork to seal.

Cooking Methods

Baking:

  • Preheat the oven to 180–190°C (356–374°F).
  • Bake the pies until they turn a golden brown on both sides.

Frying:

  • Heat 3 tablespoons of olive oil in a pan over medium-low heat.
  • Fry the pies until golden on both sides.
