Ingredients for the Filling
- 1 kg spinach
- 1 medium onion, finely chopped
- 4 spring onions, finely chopped
- 1 small leek, finely chopped
- 1 bunch dill, finely chopped
- 1 bunch parsley, finely chopped

- 150 g feta cheese, crumbled
- 60 g rice (to absorb excess moisture)

Instructions for the Filling
- Wash the spinach and herbs thoroughly and finely chop them into a large bowl.
- Heat olive oil in a large pan and sauté the onion and spring onions for 3–4 minutes.
- Add the spinach and herbs, stirring until well wilted (about 6–8 minutes).
- Season with salt, pepper, and add the rice. Mix everything well, turn off the heat, and let the mixture cool.
- Once cooled, mix in the crumbled feta cheese.

- 1 kg all-purpose flour
- 300 g olive oil
- Salt
- 200 g water
Instructions for the Dough
- In a bowl, combine the flour, olive oil, and salt. Gradually add the water while kneading until you form a firm dough.
- Divide the dough into small balls and place them on a tray. Let them rest for about 1 hour.
- Roll out each ball into small circles using a rolling pin.
- Place a spoonful of the filling in the center of each circle. Fold the dough over the filling to form a semicircle and press the edges with a fork to seal.
Cooking Methods
Baking:
- Preheat the oven to 180–190°C (356–374°F).
- Bake the pies until they turn a golden brown on both sides.
Frying:
- Heat 3 tablespoons of olive oil in a pan over medium-low heat.
- Fry the pies until golden on both sides.
