Fragrant Pasta Baked Gnocchi with Basil Sauce

Soft potato gnocchi baked under a lush basil-tomato sauce with melting cheese & garlic—Pasta layered in fragrance, warmth and creamy comfort.

Ingredients for Gnocchi

  • 500 g potatoes
  • 180 g flour
  • 120 g melting cheese
  • 2 eggs
  • 1 pinch salt
  • 1 pinch pepper
  • Salt for boiling
  • Olive oil for frying

Preparation for Gnocchi

  1. Peel the potatoes, cut them into large pieces, and place them in a pot.
  2. Cover with cold water, add salt, and boil on high heat until the potatoes are soft (approximately 20-25 minutes after the water starts boiling).
  3. Drain the potatoes and spread them on a baking tray to cool and evaporate excess moisture.
  4. Mash the potatoes into a large bowl.
  5. Add the remaining ingredients and mix gently to combine. Avoid overmixing to prevent the dough from becoming too stiff due to the potato starch.
  6. Transfer the dough to a floured surface, sprinkle with a little flour, and shape into strips, or use a piping bag.
  7. Cut the strips into small cubes and dust with flour to prevent sticking.

Boiling the Gnocchi

  1. Bring water to a boil in a large pot.
  2. Add all the gnocchi at once to cook evenly. Wait for them to float to the surface.
  3. Once they float, cook for an additional 40-50 seconds, then remove with a slotted spoon.
  4. Place the gnocchi in a bowl of ice water for 5 minutes.
  5. Drain and spread them on a baking tray.

Ingredients for Sauce

  • 300 g gnocchi
  • 3 ripe tomatoes, diced
  • 1 small onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 100 g grated Parmesan
  • 1 tablespoon fresh basil, finely chopped
  • 50 g water
  • Salt
  • Pepper
  • Olive oil

Preparation

  1. Heat olive oil in a pan and sauté the onion and garlic until fragrant.
  2. Add the tomatoes, salt, pepper, basil, and water. Simmer until the liquid reduces, then remove from heat.
  3. Spread the gnocchi in a baking dish, pour the sauce over them, and sprinkle with grated Parmesan.
  4. Bake in a preheated oven at 170-180°C (340-355°F) until the cheese melts and turns golden brown.
