  • 1 sheet of puff pastry
  • 400 g spinach
  • 300 g feta cheese
  • 2 onions, finely chopped
  • 2 tablespoons yogurt
  • 2 garlic cloves, finely chopped
  • 2 tablespoons dill, finely chopped
  • 150 g grated kefalotyri cheese
  • 50 g rice (to absorb the moisture from the spinach)
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Prepare the Base
    • Place the puff pastry in a baking tray, folding the edges slightly upward to hold the filling.
    • Sprinkle half of the grated kefalotyri over the pastry.
    • Poke holes in the pastry with a fork and bake in a preheated oven at 200°C (390°F) for 15 minutes.
  2. Prepare the Onions
    • Heat 2 tablespoons of olive oil in a pan and sauté the onions, stirring constantly, until caramelized.
    • Transfer the caramelized onions to a bowl.
  3. Prepare the Spinach Mixture
    • In the same pan, heat another 2 tablespoons of olive oil.
    • Add the garlic, chopped spinach, dill, salt, pepper, and rice. Sauté until the spinach wilts.
  4. Prepare the Feta Mixture
    • In a bowl, mix the feta cheese, yogurt, a drizzle of olive oil, and a dash of pepper. Mash with a fork until well combined.
  5. Assemble the Pie
    • After 15 minutes, remove the puff pastry from the oven.
    • Layer the toppings in the following order: caramelized onions, the feta mixture, the spinach mixture, and finally the remaining grated kefalotyri.
  6. Bake
    • Lower the oven temperature to 180°C (355°F) and bake the pie for an additional 20 minutes. Keep an eye on it, as baking times can vary between ovens.
