Today we’re making a different kind of spinach pie: easy, quick, and above all, delicious—perfect for when time is short.
Ingredients
- 1 sheet of puff pastry
- 400 g spinach
- 300 g feta cheese
- 2 onions, finely chopped
- 2 tablespoons yogurt
- 2 garlic cloves, finely chopped
- 2 tablespoons dill, finely chopped
- 150 g grated kefalotyri cheese
- 50 g rice (to absorb the moisture from the spinach)
- Olive oil
- Salt
- Pepper
Instructions
- Prepare the Base
- Place the puff pastry in a baking tray, folding the edges slightly upward to hold the filling.
- Sprinkle half of the grated kefalotyri over the pastry.
- Poke holes in the pastry with a fork and bake in a preheated oven at 200°C (390°F) for 15 minutes.
- Prepare the Onions
- Heat 2 tablespoons of olive oil in a pan and sauté the onions, stirring constantly, until caramelized.
- Transfer the caramelized onions to a bowl.
- Prepare the Spinach Mixture
- In the same pan, heat another 2 tablespoons of olive oil.
- Add the garlic, chopped spinach, dill, salt, pepper, and rice. Sauté until the spinach wilts.
- Prepare the Feta Mixture
- In a bowl, mix the feta cheese, yogurt, a drizzle of olive oil, and a dash of pepper. Mash with a fork until well combined.
- Assemble the Pie
- After 15 minutes, remove the puff pastry from the oven.
- Layer the toppings in the following order: caramelized onions, the feta mixture, the spinach mixture, and finally the remaining grated kefalotyri.
- Bake
- Lower the oven temperature to 180°C (355°F) and bake the pie for an additional 20 minutes. Keep an eye on it, as baking times can vary between ovens.
