Ingredients

  • 500g dried white beans
  • 2 carrots, sliced
  • 1 medium onion, finely chopped
  • 1 bunch of celery, chopped
  • Olive oil
  • Salt
  • Sweet paprika
  • Water

Instructions

  1. Prepare the Beans:
    • The night before, soak the beans in plenty of water to soften them.
    • In the morning, rinse them thoroughly and place them in a pot. Cover with water about two fingers above the beans.
  2. Cook the Vegetables:
    • Add the chopped onion, carrots, and celery to the pot with the beans.
    • Bring to a boil and then reduce to a simmer. Cook for about 1 hour until the beans are tender.
    • Keep an eye on the water level, adding hot water if necessary during cooking.
  3. Finish the Dish:
    • Once the beans are cooked, add olive oil, salt, and sweet paprika.
    • Stir well and let simmer for a few more minutes to allow the flavors to meld.
    • The paprika adds a beautiful color and a delightful flavor to the dish.
