- 500g dried white beans
- 2 carrots, sliced
- 1 medium onion, finely chopped
- 1 bunch of celery, chopped
- Olive oil
- Salt
- Sweet paprika
- Water
Instructions
- Prepare the Beans:
- The night before, soak the beans in plenty of water to soften them.
- In the morning, rinse them thoroughly and place them in a pot. Cover with water about two fingers above the beans.
- Cook the Vegetables:
- Add the chopped onion, carrots, and celery to the pot with the beans.
- Bring to a boil and then reduce to a simmer. Cook for about 1 hour until the beans are tender.
- Keep an eye on the water level, adding hot water if necessary during cooking.
- Finish the Dish:
- Once the beans are cooked, add olive oil, salt, and sweet paprika.
- Stir well and let simmer for a few more minutes to allow the flavors to meld.
- The paprika adds a beautiful color and a delightful flavor to the dish.
