Ingredients

  • 500g black-eyed peas
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Prepare the Black-Eyed Peas:
    • Place the black-eyed peas in a pot, cover with water, and bring to a boil.
    • Once boiling, discard the first water and drain the peas.
  2. Cook the Soup:
    • Return the peas to the pot and add the onion, carrot, salt, and enough water to cover the beans by 2-3 fingers.
    • Bring to a boil, then reduce the heat to low and simmer for about 1 hour, or until the peas are tender.
    • If the soup needs more water during cooking, always add hot water.
  3. Finish the Dish:
    • Once the soup is cooked, turn off the heat and add the olive oil and pepper. Stir well to combine.
  4. Serve Warm:
    • Ladle the soup into bowls and enjoy with crusty bread or a side salad.
