Ingredients

  • 500g chickpeas
  • 1 onion
  • 1-2 ripe tomatoes
  • 1 lemon
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Soak the Chickpeas
    • Place the chickpeas in a large pot with plenty of water and let them soak overnight.
  2. Cook the Chickpeas
    • The next morning, drain the chickpeas and return them to the pot.
    • Cover with fresh water and add the onion (whole or finely chopped, depending on your preference).
    • Cover the pot and simmer over medium heat for about 1 hour, or until the chickpeas are tender.
  3. Add Seasonings and Tomatoes
    • Once the chickpeas are nearly cooked, add salt, the chopped tomatoes, and a generous drizzle of olive oil.
    • If the soup needs more liquid during cooking, add hot water as necessary.
  4. Serve
    • When the chickpeas are soft and the flavors have blended, remove the pot from the heat.
    • Serve hot, garnished with freshly ground black pepper and a squeeze of lemon juice.
