Ingredients

  • 500g chickpeas
  • 1 small onion, finely chopped
  • Juice of half a lemon
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Soak the Chickpeas:
    • Place the chickpeas in a bowl of water the night before to soak.
  2. Prepare for Cooking:
    • In the morning, rinse the chickpeas thoroughly and transfer them to a pressure cooker.
    • Add the chopped onion, salt, and enough water to just cover the chickpeas.
  3. Cook the Chickpeas:
    • Seal the pressure cooker and cook on medium heat for 30–35 minutes.
  4. Final Steps:
    • Once the chickpeas are tender, open the pressure cooker, add olive oil, and simmer uncovered for another 10 minutes until the broth thickens slightly.
    • If you prefer a thinner broth, add a little more water.
  5. Serve:
    • Serve the chickpeas with a sprinkle of black pepper and freshly squeezed lemon juice on top.
