Ingredients (Serves 1)

  • 400g red lentils
  • 1 onion, finely chopped
  • 3–4 garlic cloves
  • Oregano
  • Salt
  • Pepper
  • 2 ripe tomatoes, finely chopped
  • Olive oil

Instructions

  1. Prepare the Lentils:
    • Rinse the red lentils thoroughly and place them in a pot.
    • Add enough water to cover the lentils plus a little extra.
  2. Add Ingredients:
    • Add the chopped onion, garlic cloves, salt, and tomatoes to the pot.
  3. Cook the Lentils:
    • Bring to a boil, then reduce to medium heat and simmer for 40–45 minutes, or until the lentils are tender.
    • If needed, add more water gradually, always using hot water to maintain the boil.
  4. Finishing Touches:
    • Once the lentils are cooked, remove the pot from the heat.
    • Stir in olive oil and oregano at the end to preserve their aroma and flavor.
