Ingredients for the Rice

  • 250g brown rice
  • 600g water
  • 1 grated carrot
  • 3 tbsp olive oil
  • Salt

Instructions for the Rice

  1. Heat the olive oil in a saucepan over medium heat.
  2. Add the rice and grated carrot, sautéing for 2 minutes.
  3. Pour in the water and add salt. Stir well.
  4. Simmer over medium heat for 20 minutes.
  5. If you prefer softer rice, add a bit more water and cook for another 2–3 minutes.

  • 500g mushrooms, sliced
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 2 garlic cloves, finely chopped
  • 2–3 ripe tomatoes, finely chopped
  • Salt
  • Pepper
  • Sweet paprika
  • 1 bunch parsley, chopped
  • 50g white wine
  • 3–4 tbsp olive oil

Instructions for the Mushroom Sauce

  1. Heat the olive oil in a deep skillet over medium heat.
  2. Sauté the onion and garlic until softened.
  3. Add the bell pepper and mushrooms, sautéing for 2 more minutes.
  4. Deglaze with the white wine and add the tomatoes, salt, pepper, sweet paprika, and parsley.
  5. Simmer for 10–15 minutes until the sauce thickens slightly. If needed, add a bit of water.
  6. Serve warm over the rice.
