- 4 pieces of desalted cod
- 4 potatoes, cut into chunks
- 5 garlic cloves
- Juice of 2 lemons
- Salt
- Pepper
- 200 ml water
- Half a bunch of parsley, finely chopped
- Olive oil
Preparation
- In a shallow pot, add the olive oil, garlic, cod, potatoes, salt, parsley, and pepper.
- Pour in enough water to cover all the ingredients; if needed, add a bit more.
- Simmer over medium heat until the potatoes soften and the broth has thickened but not completely evaporated.
- About five minutes before turning off the heat, add the lemon juice, gently shake the pot to distribute evenly, and then remove from heat.
- Cover the pot for 2-3 minutes before serving.
