Ingredients

  • 4 pieces of desalted cod
  • 4 potatoes, cut into chunks
  • 5 garlic cloves
  • Juice of 2 lemons
  • Salt
  • Pepper
  • 200 ml water
  • Half a bunch of parsley, finely chopped
  • Olive oil

Preparation

  1. In a shallow pot, add the olive oil, garlic, cod, potatoes, salt, parsley, and pepper.
  2. Pour in enough water to cover all the ingredients; if needed, add a bit more.
  3. Simmer over medium heat until the potatoes soften and the broth has thickened but not completely evaporated.
  4. About five minutes before turning off the heat, add the lemon juice, gently shake the pot to distribute evenly, and then remove from heat.
  5. Cover the pot for 2-3 minutes before serving.
