- 1 medium onion, blended into a paste
- 2 tablespoons fresh dill, finely chopped
- 2 tablespoons fresh or dried mint, finely chopped
- 1 egg
- Salt (if needed)
- Pepper
- Flour (just enough to create a thick batter, not too firm)
- Olive oil for frying
Preparation
- Remove any bones and skin from the cod, then break it into very small pieces by hand.
- In a mixing bowl, add the cod, onion, dill, mint, pepper, egg, and salt (if needed). Mix thoroughly.
- Gradually add flour, stirring continuously, until you achieve a thick, batter-like consistency.
- Refrigerate the mixture for at least 1 hour to rest.
- Heat olive oil in a frying pan over medium heat.
- Using a tablespoon, scoop some batter and place it into the hot oil.
- Fry each fritter on both sides until it turns a beautiful golden color.
