Ingredients

  • 500 g salted cod, well-desalted
  • 1 medium onion, blended into a paste
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons fresh or dried mint, finely chopped
  • 1 egg
  • Salt (if needed)
  • Pepper
  • Flour (just enough to create a thick batter, not too firm)
  • Olive oil for frying

Preparation

  1. Remove any bones and skin from the cod, then break it into very small pieces by hand.
  2. In a mixing bowl, add the cod, onion, dill, mint, pepper, egg, and salt (if needed). Mix thoroughly.
  3. Gradually add flour, stirring continuously, until you achieve a thick, batter-like consistency.
  4. Refrigerate the mixture for at least 1 hour to rest.
  5. Heat olive oil in a frying pan over medium heat.
  6. Using a tablespoon, scoop some batter and place it into the hot oil.
  7. Fry each fritter on both sides until it turns a beautiful golden color.
