Ingredients
- 500 g cleaned calamari
- 2 onions, finely chopped
- 3 garlic cloves, finely chopped
- 1 bunch parsley, finely chopped
- 4-5 tablespoons flour
- Extra flour for coating the fritters
- Salt
- Pepper

Preparation
- Clean the calamari, rinse well, drain, and finely chop them into a bowl.
- Add the onions, garlic, parsley, salt, pepper, and 2 tablespoons of olive oil. Mix well.
- Gradually add the flour, kneading until you have a firm, moldable mixture. If needed, adjust the flour to get the right consistency, then refrigerate the mixture for at least 30 minutes.
- Remove from the fridge, shape the mixture into small fritters, and coat them in flour.
- Heat enough olive oil in a pan over medium heat and fry the fritters on both sides until golden brown.
