Ingredients

  • 500 g cleaned calamari
  • 2 onions, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 bunch parsley, finely chopped
  • 4-5 tablespoons flour
  • Extra flour for coating the fritters
  • Salt
  • Pepper
  • Olive oil

Preparation

  1. Clean the calamari, rinse well, drain, and finely chop them into a bowl.
  2. Add the onions, garlic, parsley, salt, pepper, and 2 tablespoons of olive oil. Mix well.
  3. Gradually add the flour, kneading until you have a firm, moldable mixture. If needed, adjust the flour to get the right consistency, then refrigerate the mixture for at least 30 minutes.
  4. Remove from the fridge, shape the mixture into small fritters, and coat them in flour.
  5. Heat enough olive oil in a pan over medium heat and fry the fritters on both sides until golden brown.
