Ingredients

  • 1 kg sardines
  • 1 garlic clove, finely chopped
  • Fresh or dried oregano
  • Salt
  • Pepper
  • Sweet paprika
  • Olive oil

Preparation

  1. Clean the sardines by removing the scales, heads, and guts.
  2. Carefully remove the central bone, rinse them well, and allow them to drain.
  3. Once drained, lay half of the sardines in a baking dish with the skin side down.
  4. Sprinkle them with salt, pepper, paprika, and oregano, and then “marry” them by placing the remaining sardines on top, skin side up, pairing each one with another.
  5. Drizzle olive oil over the top and bake at 170-180°C (340-350°F) for 30-35 minutes, adjusting according to your oven.
