Ingredients
- 500 g desalted cod
- 2 potatoes, cut into chunks
- 1 onion, sliced
- 2 garlic cloves, finely chopped
- 1 green onion, finely chopped
- 100 g water
- Oregano
- Salt
- Pepper
- Sweet or spicy paprika
- Lemon juice, to taste
- 1 tablespoon flour
- Olive oil
Preparation
- Desalt the cod by soaking it in water for about 34-36 hours, changing the water regularly.
- In a shallow pot, heat the olive oil and sauté the onions, green onions, and garlic for 2-3 minutes.
- Place the potato chunks on top of the sautéed onions, pour in the water, and season with salt, paprika, and pepper.
- Let the potatoes simmer for 5 minutes, then gently place the cod on top.
- Simmer the dish for about 25-30 minutes, adding more water if needed to keep a bit of sauce in the pot.
- Just before removing from heat, mix the lemon juice with the flour, oregano, and a little water, then pour this mixture over the fish and potatoes.
- Shake the pot gently to distribute the sauce evenly, cook for an additional 5 minutes, and remove from heat.
