Ingredients

  • 500 g desalted cod
  • 2 potatoes, cut into chunks
  • 1 onion, sliced
  • 2 garlic cloves, finely chopped
  • 1 green onion, finely chopped
  • 100 g water
  • Oregano
  • Salt
  • Pepper
  • Sweet or spicy paprika
  • Lemon juice, to taste
  • 1 tablespoon flour
  • Olive oil

Preparation

  1. Desalt the cod by soaking it in water for about 34-36 hours, changing the water regularly.
  2. In a shallow pot, heat the olive oil and sauté the onions, green onions, and garlic for 2-3 minutes.
  3. Place the potato chunks on top of the sautéed onions, pour in the water, and season with salt, paprika, and pepper.
  4. Let the potatoes simmer for 5 minutes, then gently place the cod on top.
  5. Simmer the dish for about 25-30 minutes, adding more water if needed to keep a bit of sauce in the pot.
  6. Just before removing from heat, mix the lemon juice with the flour, oregano, and a little water, then pour this mixture over the fish and potatoes.
  7. Shake the pot gently to distribute the sauce evenly, cook for an additional 5 minutes, and remove from heat.
