- 1 kg calamari
- Flour
- 5 potatoes

- Clean the calamari, removing the thin cartilage on their back, the beak, and the eyes, as the eyes can burst while frying. Rinse them, salt them, and place them in a colander to drain.
- Once they have drained, dredge the calamari in flour and fry in hot oil until golden brown on both sides. Fry for 3 minutes on each side; any longer can make them tough. Once done, transfer to a serving plate.
- Peel and cut the potatoes, then fry in hot oil until golden brown. Serve the calamari and fries hot.
