- 100g water
- Salt

- 2 tablespoons olive oil for the tortellini
Instructions:
For the Tortellini:
- Fill a pot with water, add salt, and bring it to a boil.
- Once the water boils, add the tortellini and cook for about 20 minutes, or until they reach your desired tenderness.
- Drain the tortellini using a colander and place them back in the pot.
- Heat 2 tablespoons of olive oil in a frying pan over medium heat, pour it over the tortellini, and toss gently to coat.
For the Tomato Sauce:
- In a small saucepan, heat 4 tablespoons of olive oil over medium heat. Add the onion and garlic and sauté until softened.
- Add the chopped tomatoes and sauté for another minute with the onion and garlic.
- Stir in the water and a pinch of salt. Let the sauce simmer until most of the liquid evaporates and it thickens.
- Five minutes before removing the sauce from the heat, add the pepper, paprika, and parsley to preserve their fresh aroma.
To Serve:
Combine the tortellini with the tomato sauce, toss gently, and serve immediately.
