Ingredients
- 500 g pasta
- 3–4 ripe tomatoes, finely chopped
- 1 small zucchini, finely chopped
- 1 small carrot, finely chopped
- 1/2 red bell pepper, finely chopped
- 1/2 green bell pepper, finely chopped
- 1/2 eggplant, finely chopped
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 2–3 sprigs of basil
- 4–5 tablespoons olive oil (for the sauce)
- 60 g water (for the sauce)
- Pepper
- Paprika
Instructions for the Pasta
- Cook the Pasta:
Fill a large pot with water, add salt, and bring it to a boil over high heat. Once boiling, add the pasta and cook for about 20 minutes or until it reaches your desired level of doneness. Drain the pasta and return it to the pot.
Instructions for the Sauce
- Prepare the Vegetables:
Heat the olive oil in a small saucepan over medium heat. Add the onion and sauté for 2 minutes.
Then, add the zucchini, eggplant, carrot, garlic, and bell peppers. Sauté everything together for another 2 minutes. - Cook the Sauce:
Add the tomatoes, water, and salt. Simmer the mixture over medium heat until the sauce thickens. - Finalize the Flavor:
Turn off the heat and stir in the pepper, paprika, and finely chopped basil.
Combine and Serve
Pour the prepared vegetable sauce over the pasta and mix well to combine all the flavors. Serve hot and enjoy!
