Ingredients

  • 300 g rotini pasta
  • 1 onion, sliced
  • 4 tbsp mayonnaise
  • 3 tbsp balsamic vinegar
  • 3 hard-boiled eggs, quartered
  • 2 tbsp parsley, finely chopped
  • Salt
  • Pepper
  • 4 tbsp olive oil

Instructions

  1. Prepare the Eggs
    • Place the eggs in a small pot, cover with water, and bring to a boil over medium heat.
    • Boil for 5 minutes once the water starts boiling.
    • Remove from heat, let cool slightly, peel, and quarter the eggs.
  2. Make the Dressing
    • In a bowl, combine the olive oil, balsamic vinegar, mayonnaise, a pinch of salt, and pepper. Mix thoroughly to create a smooth dressing.
  3. Cook the Pasta
    • In a pot, bring water to a boil with a pinch of salt over medium heat.
    • Add the rotini pasta and cook for 15–20 minutes or until al dente.
    • Drain the pasta and transfer it to a serving bowl or salad dish.
  4. Assemble the Salad
    • Add the dressing and sliced onions to the pasta and mix well to coat.
    • Top with the quartered eggs and sprinkle with chopped parsley.
  5. Rest and Serve
    • Cover the salad bowl and let the salad rest for 10 minutes to allow the flavors to meld together.
