Ingredients for the Dough

  • 300 g flour
  • 3 eggs
  • 2 tbsp olive oil
  • Pinch of salt
  • A little semolina for rolling the pasta

Ingredients for the Filling

  • 60 g sun-dried tomatoes (click here for a recipe to make your own)
  • 200 g feta cheese, crumbled
  • Oregano
  • Pepper

For Serving

  • 2 tbsp olive oil or butter
  • 1 garlic clove, finely chopped
  • Pepper
  • Grated cheese of your choice

Preparation

For the Filling

  1. Finely chop the sun-dried tomatoes and place them in a bowl.
  2. Add the crumbled feta, oregano, and pepper, then mix thoroughly to combine. Set aside.

For the Dough

  1. Place the flour in a large bowl and create a well in the center.
  2. Add the eggs, olive oil, and salt into the well, then knead for about 10 minutes until the dough is smooth and elastic. Add more flour if necessary.
  3. Wrap the dough in cling film and refrigerate for at least 1 hour to rest.

Shaping the Ravioli

  1. After resting, divide the dough into portions and roll it out into thin sheets using a rolling pin or pasta machine. Sprinkle with semolina as needed to prevent sticking.
  2. Cut the sheets into equal pieces. On one side of the sheet, place small amounts of the filling, ensuring space between the mounds and a margin at the edges.
  3. Brush water around the filling and fold the sheet over to cover it. Press firmly around the filling to seal and remove any air.
  4. Cut the ravioli with a knife into desired shapes.

Cooking the Ravioli

  1. Boil a large pot of salted water. Add the ravioli and cook for 4-5 minutes.
  2. Meanwhile, heat butter or olive oil in a skillet, add the garlic and pepper, and sauté until the garlic begins to turn golden. Be careful not to burn the garlic to avoid bitterness.
  3. Transfer the cooked ravioli to plates, drizzle with the garlic butter, and sprinkle with grated cheese of your choice.
