Ingredients for the Dough
- 300 g flour
- 3 eggs
- 2 tbsp olive oil

- 200 g feta cheese, crumbled

Preparation
For the Filling
- Finely chop the sun-dried tomatoes and place them in a bowl.
- Add the crumbled feta, oregano, and pepper, then mix thoroughly to combine. Set aside.
For the Dough
- Place the flour in a large bowl and create a well in the center.
- Add the eggs, olive oil, and salt into the well, then knead for about 10 minutes until the dough is smooth and elastic. Add more flour if necessary.
- Wrap the dough in cling film and refrigerate for at least 1 hour to rest.
Shaping the Ravioli
- After resting, divide the dough into portions and roll it out into thin sheets using a rolling pin or pasta machine. Sprinkle with semolina as needed to prevent sticking.
- Cut the sheets into equal pieces. On one side of the sheet, place small amounts of the filling, ensuring space between the mounds and a margin at the edges.
- Brush water around the filling and fold the sheet over to cover it. Press firmly around the filling to seal and remove any air.
- Cut the ravioli with a knife into desired shapes.
Cooking the Ravioli
- Boil a large pot of salted water. Add the ravioli and cook for 4-5 minutes.
- Meanwhile, heat butter or olive oil in a skillet, add the garlic and pepper, and sauté until the garlic begins to turn golden. Be careful not to burn the garlic to avoid bitterness.
- Transfer the cooked ravioli to plates, drizzle with the garlic butter, and sprinkle with grated cheese of your choice.
