Ingredients for the Dough

  • 300 g flour
  • 3 eggs
  • 2 tbsp olive oil
  • Pinch of salt
  • A little semolina for rolling the pasta

Ingredients for the Filling

  • 3 medium potatoes
  • 2 spring onions, finely chopped
  • ½ bunch dill, finely chopped
  • 100 g feta cheese, crumbled (or any cheese of your choice)
  • Salt
  • Pepper
  • 2 tbsp olive oil

For Serving

  • 2 tbsp olive oil or butter
  • 1 garlic clove, finely chopped
  • Pepper
  • Grated cheese of your choice

Preparation

For the Filling

  1. Heat the olive oil in a frying pan over medium heat, sauté the spring onions, and set aside.
  2. Wash the potatoes thoroughly, boil them with their skins in salted water, then peel and let them cool slightly.
  3. Mash the potatoes in a bowl and mix in the sautéed onions, dill, salt (if needed), pepper, and feta cheese.
  4. Combine well and set the filling aside.

For the Dough

  1. Place the flour in a large bowl and create a well in the center.
  2. Add the eggs, olive oil, and salt, then knead for about 10 minutes until you have a smooth, elastic dough. Add more flour if needed.
  3. Wrap the dough in plastic wrap and refrigerate for at least 1 hour to rest.

Shaping the Ravioli

  1. Divide the rested dough into pieces and roll out into thin sheets using a rolling pin or pasta machine. Sprinkle with semolina to prevent sticking.
  2. Lay the filling along one side of a sheet in small mounds, ensuring enough space between each and leaving a border at the edges.
  3. Brush water around the filling and fold the sheet over to cover. Press around the filling to seal and remove air pockets.
  4. Cut the ravioli with a knife into desired shapes.

Cooking the Ravioli

  1. Bring a large pot of salted water to a boil. Add the ravioli and cook for 4–5 minutes.
  2. Meanwhile, heat butter or olive oil in a frying pan, add garlic and pepper, and sauté until the garlic turns golden (be careful not to burn it).
  3. Remove the cooked ravioli with a slotted spoon, plate them, and drizzle with the garlic butter.
  4. Sprinkle with grated cheese and serve warm.
