Ingredients for the Dough
- 300 g flour
- 3 eggs
- 2 tbsp olive oil
- Pinch of salt
- A little semolina for rolling the pasta

- 200 g spinach
- 150 g feta cheese, crumbled
- ½ bunch dill, finely chopped

Preparation
For the Filling
- Heat the olive oil in a frying pan over medium heat. Add the spinach, salt, pepper, and dill, and sauté for 2–3 minutes.
- Transfer the cooked spinach to a strainer to drain and cool.
- Once cooled, place the spinach in a bowl, add the crumbled feta, mix well, and set aside.
For the Dough
- Place the flour in a large bowl and make a well in the center.
- Add the eggs, olive oil, and salt into the well and knead for about 10 minutes until you have a smooth, elastic dough.
- Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 1 hour.
Shaping the Ravioli
- Remove the dough from the fridge and divide it into pieces. Roll out each piece into thin sheets using a rolling pin or pasta machine, sprinkling with semolina to prevent sticking.
- Place small mounds of filling along one side of the sheet, ensuring gaps between them.
- Brush water around the filling and fold the sheet over to enclose the filling.
- Press gently around each mound to seal the edges and remove air pockets.
- Use a knife to cut the ravioli into individual pieces.
Cooking the Ravioli
- Bring a large pot of salted water to a boil. Add the ravioli and cook for 4–5 minutes.
- Meanwhile, heat butter or olive oil in a frying pan. Add garlic and pepper, and sauté until the garlic is golden (avoid burning the garlic).
- Remove the cooked ravioli with a slotted spoon, plate them, and drizzle with the garlic butter.
- Sprinkle with grated cheese and serve warm.
