Fresh Pasta Spinach Ravioli Delight

Handmade ravioli stuffed with spinach, feta & dill, paired with garlic butter—Pasta wrapped in garden freshness and creamy cheese, tender and heart-warming.

Ingredients for the Dough

  • 300 g flour
  • 3 eggs
  • 2 tbsp olive oil
  • Pinch of salt
  • A little semolina for rolling the pasta

Ingredients for the Filling

  • 200 g spinach
  • 150 g feta cheese, crumbled
  • ½ bunch dill, finely chopped
  • Salt
  • Pepper
  • 3 tbsp olive oil

For Serving

  • 2 tbsp olive oil or butter
  • 1 garlic clove, finely chopped
  • Pepper
  • Grated cheese of your choice

Preparation

For the Filling

  1. Heat the olive oil in a frying pan over medium heat. Add the spinach, salt, pepper, and dill, and sauté for 2–3 minutes.
  2. Transfer the cooked spinach to a strainer to drain and cool.
  3. Once cooled, place the spinach in a bowl, add the crumbled feta, mix well, and set aside.

For the Dough

  1. Place the flour in a large bowl and make a well in the center.
  2. Add the eggs, olive oil, and salt into the well and knead for about 10 minutes until you have a smooth, elastic dough.
  3. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 1 hour.

Shaping the Ravioli

  1. Remove the dough from the fridge and divide it into pieces. Roll out each piece into thin sheets using a rolling pin or pasta machine, sprinkling with semolina to prevent sticking.
  2. Place small mounds of filling along one side of the sheet, ensuring gaps between them.
  3. Brush water around the filling and fold the sheet over to enclose the filling.
  4. Press gently around each mound to seal the edges and remove air pockets.
  5. Use a knife to cut the ravioli into individual pieces.

Cooking the Ravioli

  1. Bring a large pot of salted water to a boil. Add the ravioli and cook for 4–5 minutes.
  2. Meanwhile, heat butter or olive oil in a frying pan. Add garlic and pepper, and sauté until the garlic is golden (avoid burning the garlic).
  3. Remove the cooked ravioli with a slotted spoon, plate them, and drizzle with the garlic butter.
  4. Sprinkle with grated cheese and serve warm.
