For Cooking the Pasta
- Water
- Salt
- 2–3 tbsp butter
- 1 garlic clove, finely chopped
- Pepper
- Grated cheese of your choice
Instructions
For the Dough
- In a large mixing bowl, combine the flour, eggs, olive oil, and salt. Knead the mixture until it forms a firm dough.
- Wrap the dough in plastic wrap and refrigerate for at least 2 hours. You can keep it in the fridge for up to 2–3 days if needed.
- Divide the dough into 2–3 pieces and roll each piece into thin sheets using a rolling pin or pasta machine.
- Fold each sheet 2–3 times and cut into thin strips using a sharp knife. Alternatively, pass the dough through a pasta machine, starting with the widest setting and gradually moving to thinner settings. Lightly dust with flour to prevent sticking.
For Cooking
- Bring a large pot of water to a boil, add salt, and cook the pasta for 4–5 minutes, depending on the thickness of the noodles.
- Drain the pasta, place it on a platter, and set it aside.
- In a frying pan, melt the butter and sauté the garlic until fragrant but not browned. Add the pepper.
- Pour the garlic butter over the pasta and sprinkle generously with grated cheese.
