Pita Dough

Ingredients

  • 500 g all-purpose flour
  • 1/2 packet dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp vinegar
  • Lukewarm water
  • A few drops of olive oil for cooking each pita

Instructions

  1. Sift the flour into a bowl, make a well in the center, and add the yeast, salt, vinegar, and sugar.
  2. Gradually add lukewarm water while kneading until the dough becomes soft and doesn’t stick to your hands.
  3. Cover the bowl with a towel and let the dough rise for 1 hour.
  4. Divide the dough into 4-5 pieces, depending on the desired pita size.
  5. Flatten each piece using your hands or a rolling pin, and drizzle a few drops of olive oil on top.
  6. Cook the pitas in a non-stick pan for 3-4 minutes on each side.
  7. Keep them warm until ready to assemble to maintain their flexibility.

Beef Patty Ingredients

  • 500 g ground beef
  • 4 slices of stale bread, soaked and squeezed
  • 2 tbsp chopped parsley
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1/2 tsp cinnamon
  • 1 egg
  • Salt
  • Pepper
  • Oregano
  • 2 tbsp vinegar
  • 2 tbsp olive oil

Fries Ingredients

  • 5 medium potatoes
  • Olive oil for frying

Toppings for Each Souvlaki

  • 1 fried potato
  • 3-4 onion slices
  • 3-4 tomato slices
  • Arugula or lettuce leaves
  • 1 tbsp yogurt or tzatziki
  • 1 sliced pepper
  • Sweet paprika
  • Salt
  • Parchment paper for wrapping

Instructions

For the Beef Patties

  1. Place the ground beef in a bowl, spread it out slightly, and drizzle with vinegar.
  2. Add the remaining ingredients and knead thoroughly for about 10 minutes until the mixture is well-combined and fluffy.
  3. Cover the bowl and refrigerate for 2 hours to let the flavors develop.
  4. Remove from the refrigerator, knead briefly, and shape into patties of your desired size.
  5. Heat a grill pan over medium-high heat without oil and grill the patties for 4-5 minutes on each side.

For the Fries

  1. Peel and wash the potatoes, then cut them into rectangular strips for frying.
  2. Heat olive oil in a frying pan and fry the potatoes until golden and crispy.

To Assemble the Souvlaki

  1. Cut pieces of parchment paper into rectangular shapes.
  2. Place a pita on each sheet of parchment paper.
  3. Add the fries, a beef patty, pepper slices, tomatoes, onion, arugula, yogurt or tzatziki, paprika, and a pinch of salt on top of the pita.
  4. Fold one side of the pita, bring the edges together, and carefully wrap the parchment paper around the souvlaki to secure it.
