Ingredients for the Pita Bread Dough

  • 500 g all-purpose flour
  • 1/2 packet dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp vinegar
  • Lukewarm water
  • A few drops of olive oil for cooking each pita

Instructions for the Dough

  1. Sift the flour into a bowl, make a well in the center, and add the yeast, salt, vinegar, and sugar.
  2. Gradually add the lukewarm water while kneading until the dough becomes soft and doesn’t stick to your hands.
  3. Cover the dough with a towel and let it rise for 1 hour.
  4. Divide the dough into 4-5 pieces depending on the desired size of the pita breads.
  5. Roll out each piece using your hands or a rolling pin. Drizzle a few drops of olive oil on each pita.
  6. Cook the pitas in a non-stick pan for 3-4 minutes on each side.
  7. Keep the pitas warm to maintain their flexibility for wrapping.

  • 4 medium-sized mushrooms per souvlaki
  • 1 medium potato per souvlaki
  • 4 slices of tomato per souvlaki
  • 2-3 slices of raw onion per souvlaki
  • Salt
  • 2-3 arugula leaves per souvlaki
  • 1 tbsp yogurt or tzatziki per souvlaki
  • Olive oil for frying
  • Parchment paper for wrapping

Instructions

For the Potatoes:

  1. Peel and wash the potatoes, then cut them into slices for frying.
  2. Heat the olive oil in a frying pan and fry the potatoes until golden brown.

For the Mushrooms:

  1. Clean the mushrooms using a brush and slice them.
  2. Heat olive oil in a frying pan and sauté the mushrooms for 3-4 minutes.

For Assembly and Wrapping:

  1. Cut rectangular pieces of parchment paper, placing one pita bread on each.
  2. Layer the fried potatoes, sautéed mushrooms, onion slices, tomato slices, arugula leaves, and yogurt or tzatziki onto each pita.
  3. Add a pinch of salt.
  4. Gather the edges of the pita from one side and carefully wrap the parchment paper around it to secure the filling.
