Pita Dough

Ingredients

  • 500 g all-purpose flour
  • 1/2 packet dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp vinegar
  • Lukewarm water
  • A few drops of olive oil for cooking each pita

Instructions

  1. Sift the flour into a bowl, create a well in the center, and add the yeast, salt, vinegar, and sugar.
  2. Gradually add the lukewarm water while kneading until the dough becomes soft and pliable.
  3. Cover the bowl with a towel and let the dough rise for 1 hour.
  4. Divide the dough into 4 or 5 pieces, depending on your desired pita size.
  5. Flatten each piece into a pita using your hands or a rolling pin, and drizzle a few drops of olive oil on each.
  6. Cook the pitas in a non-stick pan for 3-4 minutes on each side.
  7. Keep them warm and flexible until ready to serve.

Kebab Ingredients

  • 250 g ground beef
  • 250 g ground lamb
  • 2 tbsp vinegar
  • 1 onion, finely chopped
  • 1 garlic clove, minced (optional)
  • 10 mint leaves, finely chopped (optional)
  • 30 g olive oil
  • 30 g water
  • Salt
  • Pepper
  • Sweet paprika

Fries Ingredients

  • 5 medium potatoes
  • Olive oil for frying

Toppings for Each Plate

  • 1 fried potato
  • 4-5 tomato slices
  • 1 red pepper, sliced into rings
  • 3-4 onion slices
  • 4-5 arugula or lettuce leaves
  • 1 tbsp yogurt
  • Salt
  • Sweet paprika

Instructions

For the Kebab

  1. In a bowl, combine all the ingredients except for the water, and begin kneading.
  2. Gradually add the water while kneading, and continue for about 15 minutes until the mixture becomes light and airy.
  3. Cover the bowl and refrigerate for 1-2 hours.
  4. Remove the mixture from the refrigerator, knead briefly, and shape into kebab-sized portions.
  5. Heat a grill pan over medium heat without adding oil.
  6. Grill the kebabs for 4-5 minutes on each side.

For the Fries

  1. Peel and wash the potatoes.
  2. Cut them into rectangular strips for frying.
  3. Heat the olive oil in a frying pan and fry the potatoes until golden and crispy.

Assembly

  1. Place the pitas on serving plates.
  2. Top each pita with fries, sliced pepper, kebabs, onion slices, tomato slices, arugula leaves, sweet paprika, yogurt, and a pinch of salt.
