Pita Dough

Ingredients

  • 500 g all-purpose flour
  • 1/2 packet dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp vinegar
  • Lukewarm water
  • A few drops of olive oil for cooking each pita

Instructions

  1. Sift the flour into a bowl, make a well in the center, and add the yeast, sugar, salt, and vinegar.
  2. Gradually add the lukewarm water while kneading until the dough becomes soft and elastic.
  3. Cover the dough with a kitchen towel and let it rise for 1 hour.
  4. Divide the dough into 4 or 5 portions, depending on the desired pita size.
  5. Shape each portion into a pita using your hands or a rolling pin. Drizzle with olive oil.
  6. Cook the pitas in a non-stick pan for 3-4 minutes on each side.
  7. Keep the pitas warm until ready to assemble to preserve their flexibility.

Beef Patty Ingredients

  • 500 g ground beef
  • 4 slices of stale bread, soaked and squeezed
  • 2-3 tbsp chopped parsley
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 1/2 tsp cinnamon
  • 1 egg
  • Salt
  • Pepper
  • Oregano
  • 2 tbsp vinegar
  • 2 tbsp olive oil

Fries Ingredients

  • 5 medium potatoes
  • Olive oil for frying

Additional Toppings

  • 1 fried potato per pita
  • 3-4 tomato slices
  • 3-4 onion slices
  • 4-5 arugula or lettuce leaves
  • 1 tbsp yogurt per pita
  • Salt
  • Sweet paprika

Instructions

For the Beef Patties

  1. Place the ground beef in a bowl and drizzle with vinegar.
  2. Add all the remaining ingredients and knead for about 10 minutes until the mixture is fluffy.
  3. Cover the bowl and refrigerate for 2 hours.
  4. Remove from the refrigerator, knead briefly, and shape the patties to your preferred size.
  5. Heat a grill pan over medium heat without adding oil.
  6. Cook the patties for about 4-5 minutes on each side.

For the Fries

  1. Peel the potatoes and cut them into rectangular strips.
  2. Heat the olive oil in a frying pan and fry the potatoes until golden and crispy.

Assembly

  1. Place the pitas on serving plates.
  2. Top each pita with fried potatoes, a beef patty, onion slices, tomato slices, arugula leaves, a dollop of yogurt, a sprinkle of sweet paprika, and a pinch of salt.
