Pita Dough
Ingredients
- 500 g all-purpose flour
- 1/2 packet dry yeast
- 1 tsp sugar
- 1 tsp salt
- 1 tbsp vinegar
- Lukewarm water
- A few drops of olive oil for cooking each pita
Instructions
- Sift the flour into a bowl, make a well in the center, and add the yeast, sugar, salt, and vinegar.
- Gradually add the lukewarm water, kneading until you get a soft dough.
- Cover the dough with a towel and let it rise for 1 hour.
- Divide the dough into 4 or 5 pieces, depending on the size of the pitas you want.
- Roll out the pitas with your hands or a rolling pin. Drizzle with a few drops of olive oil.
- Cook each pita in a non-stick pan for 3-4 minutes on each side.
- Keep the pitas warm until ready to fold, so they retain their elasticity.
Filling Ingredients
- 5 medium sausages (cut into smaller pieces if large)
- 1 potato per pita
- 4-5 tomato slices per pita
- 3-4 onion slices
- 4-5 arugula leaves
- 1 tbsp yogurt per pita
- Salt
- Sweet paprika
- Olive oil for frying

For the Sausages
- Cut the sausages in half to ensure they cook evenly.
- Heat a non-stick pan without adding any oil; the sausages will release their own fats.
- Cook to your desired level of doneness.
For the Potatoes
- Peel the potatoes and cut them into rectangular strips.
- Heat the olive oil and fry the potatoes until they are golden and crispy.
Assembly
- Place a warm pita on each plate.
- Add the fried potatoes, tomato slices, cooked sausages, arugula leaves, a sprinkle of sweet paprika, and a dollop of yogurt on top.
- Season with salt and serve immediately.
