Pita Dough

Ingredients

  • 500 g all-purpose flour
  • ½ packet of dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp vinegar
  • Lukewarm water
  • A few drops of olive oil for cooking each pita

Instructions

  1. Sift the flour into a bowl, create a well in the center, and add the yeast, salt, vinegar, and sugar.
  2. Gradually add the lukewarm water while kneading until you achieve a soft, non-sticky dough.
  3. Cover the bowl with a towel and let the dough rise for 1 hour.
  4. Divide the dough into 4–5 pieces, depending on the desired size of the pitas.
  5. Roll each piece into a circle using your hands or a rolling pin. Drizzle a few drops of olive oil.
  6. Cook each pita in a non-stick pan for 3–4 minutes on each side until golden.
  7. Keep the pitas warm to maintain their flexibility.

  • 4–5 slices of tomato per serving
  • 3–4 slices of fried onion per serving
  • 4–5 red pepper rings per serving
  • 2 lettuce leaves
  • 1 tbsp yogurt
  • Salt
  • Sweet paprika
  • Olive oil for frying

Instructions

For the Chicken

  1. Heat a grill pan over high heat until hot.
  2. Add the chicken fillets and cook for 5–6 minutes on each side, or until cooked to your preference.

For the Potatoes

  1. Peel and wash the potatoes, then cut them into rectangular pieces suitable for frying.
  2. Heat olive oil in a frying pan over high heat.
  3. Fry the potatoes until they turn golden and crispy.

For the Onion

  1. Peel and wash the onion, then slice it into rings.
  2. Heat olive oil in a pan, add the onion slices, and sauté for 5–6 minutes until softened.

Assembly

  1. Place the warm pitas on serving plates.
  2. Add the fried potatoes, chicken fillets, tomato slices, onion rings, red pepper rings, lettuce leaves, and a dollop of yogurt.
  3. Sprinkle with sweet paprika and salt to taste.
