Pita Dough

Ingredients

  • 500 g all-purpose flour
  • ½ packet of dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp vinegar
  • Lukewarm water
  • A few drops of olive oil for cooking each pita

Instructions

  1. Sift the flour into a bowl, create a well in the center, and add the yeast, salt, vinegar, and sugar.
  2. Gradually add the lukewarm water while kneading until you achieve a soft, non-sticky dough.
  3. Cover the bowl with a towel and let the dough rise for 1 hour.
  4. Divide the dough into 4–5 portions, depending on the size of pitas you want.
  5. Roll each portion into a circle using your hands or a rolling pin, and drizzle with a few drops of olive oil.
  6. Cook each pita in a non-stick pan for 3–4 minutes on each side until golden.
  7. Keep the pitas warm to maintain their flexibility.

Beef Filling

Ingredients

  • 500 g beef
  • 60 g wine
  • ½ tsp oregano
  • Salt
  • Pepper
  • 2 tbsp olive oil for frying

Instructions

  1. Wash and drain the beef, then cut it into small pieces.
  2. Heat the olive oil in a frying pan and sauté the beef for 2–3 minutes.
  3. Add the wine and salt, reduce the heat, and simmer for 15–20 minutes until the beef absorbs the liquid.
  4. Just before removing from heat, add the pepper and oregano, stir, and remove from the stove.

Potatoes and Onion

Ingredients

  • 5–6 medium potatoes
  • Olive oil for frying
  • Sliced onion rings for sautéing

Instructions

  1. Peel, wash, and cut the potatoes into rectangular sticks for frying.
  2. Heat olive oil in a pan and fry the potatoes until golden and crispy.
  3. In the same oil, lightly fry the onion rings until golden brown.

Assembly and Filling

Ingredients

  • 1 medium potato per souvlaki
  • 4 tomato slices per souvlaki
  • 2–3 onion slices per souvlaki (fried or raw)
  • 2 small lettuce leaves per souvlaki
  • 1 red bell pepper, sliced into rings
  • 1 tbsp yogurt or tzatziki per souvlaki
  • Salt
  • Sweet paprika

Instructions

  1. Lay out the pitas on your work surface.
  2. Add the fried potatoes, beef, tomato slices, bell pepper rings, onion, lettuce leaves, and a dollop of yogurt or tzatziki to each pita.
  3. Sprinkle with sweet paprika and salt to taste.
  4. Fold the sides of the pita over the filling and wrap tightly.
