Ingredients (for the Cookies)

  • 100 g yogurt
  • 100 g olive oil
  • 1 egg
  • 3 tablespoons semolina
  • 1 tablespoon cornstarch
  • 200 g flour
  • 1 packet (about 1 teaspoon) baking powder

Ingredients (for the Syrup)

  • 750 g sugar
  • 750 g water
  • 1 vanilla pod or 1 teaspoon vanilla extract

Instructions for the Cookies
Lightly grease a baking pan and set it aside.

In a bowl, whisk together the olive oil, yogurt, and egg. Add the cornstarch and semolina, mixing well until combined.

Stir in the baking powder and flour, then knead the mixture until a smooth, non-sticky dough forms.

Shape the dough into walnut-sized balls and place them on the prepared baking pan.

Bake in a preheated oven at 180–190°C (355–375°F) for about 20 minutes, or until the cookies turn golden.

As soon as you remove the hot cookies from the oven, transfer them to a deep baking dish. Pour the warm syrup over them immediately.

Allow them to cool slightly, then refrigerate for at least 2–3 hours before serving.

Instructions for the Syrup
In a saucepan, combine the water and sugar. Heat over medium heat until the water begins to boil. Stir until the sugar fully dissolves, then add the vanilla and remove from heat.
