Ingredients for 2 people

  • 300g spinach
  • 4 eggs
  • 2 ripe tomatoes, finely chopped
  • 100g country-style sausage, sliced
  • 1 onion, finely chopped
  • 1 small leek, finely chopped
  • 3 green onions, finely chopped
  • 1 bunch dill
  • 1 bunch chervil (or similar aromatic herb)
  • 2 garlic cloves, finely chopped
  • 50g ouzo
  • 100g water
  • Salt
  • Pepper
  • Paprika
  • A pinch of red pepper flakes
  • Olive oil

Instructions

  1. Wash the spinach thoroughly, cut it to the desired size, place it in a colander to drain, and set it aside.
  2. In a large skillet, heat olive oil over high heat and sauté the onion, green onions, garlic, sausage, and leek for 2-3 minutes.
  3. Add the tomatoes, stir, and deglaze with the ouzo.
  4. Next, add the water, spinach, dill, chervil, salt, pepper, paprika, and red pepper flakes.
  5. Stir well and simmer for about 5 minutes until the liquid reduces slightly but without drying out completely.
  6. Finally, crack the eggs over the mixture, cover the skillet, and cook for another 5 minutes until the eggs are set.
