Ingredients for 2 people
- 300g spinach
- 4 eggs
- 2 ripe tomatoes, finely chopped
- 100g country-style sausage, sliced
- 1 onion, finely chopped
- 1 small leek, finely chopped
- 3 green onions, finely chopped
- 1 bunch dill
- 1 bunch chervil (or similar aromatic herb)
- 2 garlic cloves, finely chopped
- 50g ouzo
- 100g water
- Salt
- Pepper
- Paprika
- A pinch of red pepper flakes
- Olive oil
Instructions
- Wash the spinach thoroughly, cut it to the desired size, place it in a colander to drain, and set it aside.
- In a large skillet, heat olive oil over high heat and sauté the onion, green onions, garlic, sausage, and leek for 2-3 minutes.
- Add the tomatoes, stir, and deglaze with the ouzo.
- Next, add the water, spinach, dill, chervil, salt, pepper, paprika, and red pepper flakes.
- Stir well and simmer for about 5 minutes until the liquid reduces slightly but without drying out completely.
- Finally, crack the eggs over the mixture, cover the skillet, and cook for another 5 minutes until the eggs are set.
