- 1 kg red mirabelle plums
- 100 g sugar
- 200 g water

- Prepare the Plums
Remove the stems from the plums and wash them thoroughly. - Make the Syrup
In a saucepan, combine the sugar and water. Bring the mixture to a boil and simmer for about 15 minutes. - Cook the Plums
Add the plums to the syrup and cook together until the skins burst. Once the skins have burst, use a slotted spoon to remove the plums and place them in a tray to cool slightly. - Peel and Store
When the plums are cool enough to handle, peel off the skins, transfer the peeled plums to a bowl, and pour the syrup over them. Store the compote in the refrigerator. - For Long-Term Storage
- If you have a large batch, place the plums and syrup in sterilized jars and seal them tightly.
- Line the bottom of a pot with a clean kitchen towel, and place the jars upside down on top.
- Cover the jars with water and boil for 15-20 minutes.
- Remove the jars, allow them to cool slightly, and tighten the lids securely. Store in a cool place or the refrigerator.
