Flatbread Dough

Ingredients

  • 500 g all-purpose flour
  • 1/2 packet of yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp vinegar
  • Lukewarm water
  • A few drops of olive oil for each flatbread during cooking

Instructions

  1. Sift the flour into a bowl, make a well in the center, and add the yeast, salt, vinegar, and sugar.
  2. Gradually add the water, kneading until you have a soft dough that doesn’t stick to your hands.
  3. Cover the bowl with a towel and let the dough rise for 1 hour.
  4. Divide the dough into 4 or 5 pieces, depending on how large you want the flatbreads.
  5. Flatten each piece by hand or with a rolling pin, then drizzle with a few drops of olive oil.
  6. Cook each flatbread in a non-stick pan for 3-4 minutes on each side until golden.
  7. Keep them warm until ready to assemble, so they stay soft and pliable.

  • 2 pork skewers per serving

For the Potatoes

  • 1 potato per serving
  • Olive oil for frying

For the Garnishes

  • 3-4 slices of fried onion per serving
  • 5-6 slices of tomato per serving

  • 5-6 slices of red pepper per serving
  • 1 tbsp yogurt
  • Salt
  • Sweet paprika

Instructions

For the Pork Skewers

  1. Heat a grill pan over high heat.
  2. Once hot, add the skewers and grill for 4-5 minutes on each side until cooked through.

For the Onion

  1. Peel, wash, and slice the onion into rings.
  2. Heat oil in a pan and add the onion rings.
  3. Sauté for 5-6 minutes until softened.

For the Potatoes

  1. Peel and wash the potatoes.
  2. Cut them into long rectangular pieces for frying.
  3. Heat oil in a pan over high heat, add the potatoes, and fry until golden brown.

To Assemble

  1. Place each flatbread on a plate.
  2. Top each flatbread with the fried potatoes, pork skewers, onion slices, tomatoes, bell pepper rings, lettuce leaves, and a dollop of yogurt.
  3. Sprinkle with a bit of paprika and salt to taste.
