Ingredients:
1 chicken breast, sliced
600g okra
3 ripe tomatoes, finely chopped
1 onion, finely chopped
2 garlic cloves, finely chopped
1/2 bunch of parsley, finely chopped
5-6 tablespoons of flour
Salt
Pepper
400g water (about 2 cups)
Olive oil
Instructions:
Wash the chicken breast, dry it, slice it, and coat it with flour.
In a pan, heat some olive oil and sauté the chicken pieces until they are lightly browned but not fully cooked.
Once done, place the chicken pieces in a bowl and set aside.
Next, place the okra in a baking dish and add the onion, garlic, parsley, tomatoes, salt, pepper, water, and olive oil.
Mix everything well so the ingredients combine.
Finally, add the chicken pieces between the okra.
Bake in a preheated oven at 180-190°C (356-374°F) for about 45-50 minutes, depending on your oven.
If you notice the dish needs more water, add some without stirring the okra, as it may cause them to break apart. Just gently shake the baking dish instead.
