Ingredients

  • 1 rabbit, cut into portions
  • 3-4 garlic cloves, finely chopped
  • 1 onion, finely chopped
  • Juice of 2 lemons
  • 200 g chicken broth or water
  • Salt
  • Pepper
  • Oregano
  • Olive oil

Instructions

  1. In a pot, heat the olive oil and sauté the rabbit pieces on both sides until they are nicely browned.
  2. Add the onion and garlic, and continue sautéing for 1-2 minutes, being careful not to burn the garlic to avoid bitterness.
  3. Add the lemon juice, salt, pepper, and oregano, and sauté everything together for another 2 minutes.
  4. Finally, add the broth or water, reduce the heat, and simmer until the rabbit is tender.
  5. Carefully turn the rabbit pieces occasionally to avoid breaking them, and add a little more water if necessary.
