Ingredients
- 1 chicken breast, sliced
- 600g okra
- 3 ripe tomatoes, finely chopped
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1/2 bunch of parsley, finely chopped
- 5-6 tablespoons of flour
- Salt
- Pepper
- 400ml water (about 2 cups)
- Olive oil
Instructions
- Wash the chicken breast, pat it dry, slice it, and coat each piece lightly with flour.
- In a pan, heat olive oil and sauté the chicken pieces until they get a bit of color, without fully cooking them. Once done, place them in a bowl and set aside.
- In a baking dish, add the okra, onion, garlic, parsley, tomatoes, salt, pepper, water, and olive oil. Stir everything well to combine.
- Place the prepared chicken pieces among the okra in the dish.
- Bake in a preheated oven at 180-190°C (356-374°F) for about 45-50 minutes, depending on your oven.
- If additional water is needed during cooking, add it carefully without stirring the okra to prevent it from breaking down. Instead, gently shake the baking dish from side to side.
