Bright Tuna & Lentil Salad Harmony
Lentils meet flaked tuna, bell peppers, red onion & fresh parsley, tossed in zesty lemon and olive oil—bold flavors with satisfying texture in every forkful.
Ingredients
- 250g lentils
- 1 can of tuna in water
- 2 bay leaves
- 1 carrot
- 1/2 bunch of parsley, finely chopped
- 2 spring onions, finely chopped
- 2 tablespoons pitted olives
- 10 cherry tomatoes or 1 tomato, chopped
- 1 small cucumber, sliced into rounds
- Salt
- Pepper
- 4-5 tablespoons olive oil
Instructions
- Wash the lentils and boil them with the bay leaves and salt until they are al dente. Drain them and place them in a bowl. Ensure they don’t overcook to maintain their shape when mixed.
- Drain the tuna and add it to the bowl with the lentils.
- Finely chop the parsley, spring onions, and other ingredients, and add them to the bowl.
- Add the olives and olive oil, then gently mix everything together.
- Taste and adjust salt if necessary. Serve fresh and enjoy!
