Ingredients

  • 1 kg hard flour
  • 5–7 eggs
  • 1 liter milk (only as much as needed)
  • 1 tablespoon salt

Instructions

  1. In a large bowl, place the flour and make a well in the center. Add the salt and lightly beaten eggs. Start mixing the flour and eggs together while gradually adding the milk. Add just enough milk to form a firm dough.
  2. Knead the dough thoroughly for 15–20 minutes until smooth. Let the dough rest for 30 minutes.
  3. Roll out the dough into sheets using a pasta machine and lay them on a clean sheet to dry.
  4. Once dry, pass the sheets through the special attachment of the pasta machine to cut them into long strips.
  5. The sheets should be dry enough so they don’t break when handled or folded. If you prefer, you can cook them fresh right away. Alternatively, spread the strips out on a sheet to dry completely and store them for use in the winter.
