Ingredients
- 1 kg hard flour
- 5–7 eggs
- 1 liter milk (only as much as needed)
- 1 tablespoon salt
Instructions
- In a large bowl, place the flour and make a well in the center. Add the salt and lightly beaten eggs. Start mixing the flour and eggs together while gradually adding the milk. Add just enough milk to form a firm dough.
- Knead the dough thoroughly for 15–20 minutes until smooth. Let the dough rest for 30 minutes.
- Roll out the dough into sheets using a pasta machine and lay them on a clean sheet to dry.
- Once dry, pass the sheets through the special attachment of the pasta machine to cut them into long strips.
- The sheets should be dry enough so they don’t break when handled or folded. If you prefer, you can cook them fresh right away. Alternatively, spread the strips out on a sheet to dry completely and store them for use in the winter.
