Ingredients for the Gnocchi

  • 500 g potatoes
  • 180 g flour
  • 120 g melting cheese
  • 2 eggs
  • 1 pinch of salt
  • 1 pinch of pepper
  • Salt for boiling

Preparation of the Gnocchi

  1. Peel the potatoes, cut them into large pieces, and place them in a pot. Cover with plenty of cold water, add salt, and boil over high heat until tender, about 20-25 minutes after the water starts boiling.
  2. Drain the potatoes and spread them on a baking tray to cool and let excess moisture evaporate.
  3. Mash the potatoes with a potato masher and transfer them to a large bowl.
  4. Add the remaining ingredients and knead gently until the mixture comes together. Avoid overworking the dough to prevent the potato starch from tightening the mixture.
  5. On a floured surface, roll the dough into strips or pipe it using a pastry bag.
  6. Cut the strips into small pieces (gnocchi), lightly flour them, and set aside to prevent sticking.

Boiling the Gnocchi

  1. Bring a pot of water to a boil and salt it generously.
  2. Drop the gnocchi into the water and wait for them to float to the surface.
  3. Once they float, cook for another 40-50 seconds.
  4. Remove the gnocchi with a slotted spoon and transfer them to a bowl of ice water for 5 minutes.
  5. Drain and spread them on a tray to dry.

Ingredients for the Mustard Sauce

  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 tablespoons mustard
  • 30 g white wine
  • 50 g water
  • Salt
  • Pepper
  • Olive oil

Preparation of the Mustard Sauce

  1. In a saucepan, heat the olive oil over medium heat. Sauté the onion and garlic for 2-3 minutes until softened.
  2. Add the white wine, water, mustard, salt, and pepper. Stir well and simmer over medium heat for 10 minutes.
  3. Add the boiled gnocchi to the sauce, stirring gently to coat without breaking them.
  4. Let everything cook together for about 10 minutes. Add a little more water if necessary to achieve the desired consistency.
