Ingredients for Gnocchi
- 500 g potatoes
- 180 g flour
- 120 g melting cheese
- 2 eggs
- 1 pinch of salt
- 1 pinch of pepper
- Salt for boiling
Preparation of Gnocchi
- Peel the potatoes, cut them into large pieces, and place them in a pot.
- Cover with plenty of cold water, add salt, and boil over high heat until the potatoes are tender, about 20-25 minutes from when the water starts boiling.

- Cut the strips into small pieces (gnocchi), dust them with flour, and set them aside to prevent sticking.
Boiling the Gnocchi
- Bring a pot of water to a boil and add salt.
- Drop the gnocchi into the boiling water and cook until they float to the surface.
- Once they float, cook for an additional 40-50 seconds.
- Use a slotted spoon to transfer the gnocchi to a bowl of ice water for 5 minutes.
- Drain and spread the gnocchi on a tray.

- 2 ripe tomatoes, finely chopped
- 2 onions, finely chopped
- 300 g mushrooms, cut into pieces
- 1 red bell pepper, diced
- 2 garlic cloves, finely chopped
- 150 g gnocchi cooking water (reserved)
- Salt

- Sweet paprika
- Oregano
- Olive oil
Preparation of the Sauce
- Heat the olive oil in a pan over medium heat. Sauté the onion, garlic, bell pepper, and mushrooms until softened.
- Add the tomatoes and sauté for 2 more minutes.
- Season with salt, pepper, paprika, and oregano.
- Use a slotted spoon to transfer the gnocchi into the pan with the sauce.
- Gently stir with a wooden spoon and gradually add the reserved gnocchi cooking water.
- Let everything simmer together for about 5 minutes. Add more gnocchi water if needed for the desired consistency.
