Ingredients for Gnocchi

  • 500 g potatoes
  • 180 g flour
  • 120 g melting cheese
  • 2 eggs
  • 1 pinch of salt
  • 1 pinch of pepper
  • Salt for boiling

Preparation of Gnocchi

  1. Peel the potatoes, cut them into large pieces, and place them in a pot.
  2. Cover with plenty of cold water, add salt, and boil over high heat until the potatoes are tender, about 20-25 minutes from when the water starts boiling.
  3. Drain the potatoes and spread them on a baking tray to cool and let excess moisture evaporate.
  4. Mash the potatoes with a potato masher and transfer them to a large bowl.
  5. Add the remaining ingredients and knead gently until everything is combined. Avoid overworking the dough to prevent the potato starch from tightening.
  6. On a floured surface, roll the dough into strips or pipe it using a pastry bag.
  7. Cut the strips into small pieces (gnocchi), dust them with flour, and set them aside to prevent sticking.

Boiling the Gnocchi

  1. Bring a pot of water to a boil and add salt.
  2. Drop the gnocchi into the boiling water and cook until they float to the surface.
  3. Once they float, cook for an additional 40-50 seconds.
  4. Use a slotted spoon to transfer the gnocchi to a bowl of ice water for 5 minutes.
  5. Drain and spread the gnocchi on a tray.

  • 2 ripe tomatoes, finely chopped
  • 2 onions, finely chopped
  • 300 g mushrooms, cut into pieces
  • 1 red bell pepper, diced
  • 2 garlic cloves, finely chopped
  • 150 g gnocchi cooking water (reserved)
  • Salt
  • Pepper
  • Sweet paprika
  • Oregano
  • Olive oil

Preparation of the Sauce

  1. Heat the olive oil in a pan over medium heat. Sauté the onion, garlic, bell pepper, and mushrooms until softened.
  2. Add the tomatoes and sauté for 2 more minutes.
  3. Season with salt, pepper, paprika, and oregano.
  4. Use a slotted spoon to transfer the gnocchi into the pan with the sauce.
  5. Gently stir with a wooden spoon and gradually add the reserved gnocchi cooking water.
  6. Let everything simmer together for about 5 minutes. Add more gnocchi water if needed for the desired consistency.
