Ingredients for Gnocchi

  • 500 g potatoes
  • 180 g flour
  • 120 g melting cheese
  • 2 eggs
  • 1 pinch of salt
  • 1 pinch of pepper
  • Salt for boiling
  • Olive oil for frying

Preparation for Gnocchi

  1. Peel the potatoes, cut them into large pieces, and place them in a pot.
  2. Cover with plenty of cold water, add salt, and boil over high heat until softened. This will take approximately 20-25 minutes from when the water begins to boil.
  3. Drain the potatoes and spread them on a baking tray to cool and allow excess moisture to evaporate.
  4. Mash the potatoes with a potato masher and transfer them to a large mixing bowl.
  5. Add the remaining ingredients to the bowl and knead gently to combine. Avoid overworking the dough to prevent it from becoming too firm due to the potato starch.
  6. On a floured surface, roll the dough into strips or use a piping bag to shape it.
  7. Cut the strips into small pieces, dust with flour, and set aside to prevent sticking.

Boiling the Gnocchi

  1. Bring a pot of water to a boil over high heat.
  2. Add the gnocchi all at once for even cooking. Wait until they float to the surface.
  3. Let them cook for an additional 40-50 seconds after floating.
  4. Remove the gnocchi with a slotted spoon and place them in a bowl of ice water for 5 minutes.
  5. Drain and spread them on a baking tray.

  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 60 g water
  • Salt
  • Pepper
  • Olive oil

Preparation

  1. Heat olive oil in a low-sided pot and sauté the onion and garlic until fragrant.
  2. Add the spinach and water, stirring to combine.
  3. Simmer for about 5 minutes, until the spinach softens. Season with salt and pepper.
  4. Finally, add the gnocchi to the pot and simmer everything together for 5 minutes until the flavors meld and the dish thickens slightly.
