Ingredients

  • 1 kg sardines
  • Salt
  • Olive oil
  • Flour

Instructions

  1. Clean the sardines by removing the scales and guts, then rinse them well. Place them in a colander, sprinkle with salt, and let them sit for about ten minutes to absorb the salt.
  2. Heat olive oil in a frying pan until hot.
  3. Lightly coat the sardines in flour, then fry them on both sides until they achieve a golden color. Be careful not to over-fry, as sardines are small and cook quickly.
