Ingredients for the Cod

  • 1 fillet of salted cod
  • Olive oil
  • Flour

Preparation for the Cod

  1. Cut the cod into pieces and place them in a large bowl, covering them with plenty of water. Soak for 34-36 hours, changing the water every 4-5 hours to remove the salt. Once desalted, drain the cod well.
  2. Heat olive oil in a frying pan over medium heat until hot.
  3. Meanwhile, dredge the cod pieces in flour, coating them well, and place them on a platter.
  4. Once the oil is hot, fry the cod on both sides until it turns golden.

Garlic Dip (Skordalia)

Ingredients for the Garlic Dip

  • 5 medium potatoes
  • 5-6 garlic cloves
  • Juice of 1-2 lemons or vinegar
  • Salt
  • Pepper
  • 100g olive oil

Preparation for the Garlic Dip

  1. Peel and cut the potatoes into pieces, place them in a pot, cover with water, and boil over medium heat for about 25-30 minutes until soft.
  2. While the potatoes cook, peel the garlic cloves and blend them with a bit of olive oil until smooth.
  3. Drain the cooked potatoes, place them in a bowl, and mash them with a fork.
  4. Add the crushed garlic, salt, and pepper, and mix well.
  5. Gradually add the olive oil and lemon juice (or vinegar), mixing continuously until the potatoes fully absorb the oil and lemon.
