- 1 kg sardines
- Vinegar
- Salt
- Olive oil
- Finely chopped garlic

Preparation
- Clean the sardines by removing the scales, gutting them, and cutting off the heads. Then, using your thumb, gently separate the bone from the flesh, starting from the belly.
- Once all sardines are cleaned, place them in a bowl and cover with vinegar. Add 4 tablespoons of salt and let them marinate for 10 hours.
- When ready, rinse each sardine individually and let them drain in a strainer.
- Finally, place them in a bowl, add the garlic and parsley, and cover with olive oil.
