Ingredients

  • 1 kg sardines
  • Vinegar
  • Salt
  • Olive oil
  • Finely chopped garlic
  • Finely chopped parsley

Preparation

  1. Clean the sardines by removing the scales, gutting them, and cutting off the heads. Then, using your thumb, gently separate the bone from the flesh, starting from the belly.
  2. Once all sardines are cleaned, place them in a bowl and cover with vinegar. Add 4 tablespoons of salt and let them marinate for 10 hours.
  3. When ready, rinse each sardine individually and let them drain in a strainer.
  4. Finally, place them in a bowl, add the garlic and parsley, and cover with olive oil.

This delicious appetizer pairs beautifully with legumes and makes a perfect companion for a glass of ouzo, offering a taste of the Mediterranean in every bite. Enjoy!
