Ingredients
- 500g mussels
- 250g long-grain rice
- 550ml water for the rice
- 2 onions, sliced into rings
- 2 bell peppers, sliced into rings (mixed colors)
- 2 tomatoes, finely chopped
- 4 tablespoons olive oil
- 1 garlic clove
- 50ml water for the sauce
- Sweet paprika
- Salt
- Pepper
- 1 teaspoon oregano
Rice Preparation
- In a pot, add the water, a pinch of salt, 1 tablespoon olive oil, and the rice.
- Cook over medium heat for about 20 minutes until the rice is tender and has absorbed all the liquid.
For the Mussels
- In a separate pot, heat the olive oil and sauté the onions, garlic, and bell peppers until slightly softened.
- Add the tomatoes, salt, pepper, paprika, oregano, and the additional water. Simmer for about 15 minutes until the vegetables are tender.
- Finally, add the mussels, stir gently, and cook for an additional 3-4 minutes.
