Rustic seafood mussel pilaf warmth

Juicy mussels paired with fragrant long-grain rice, bell peppers and sweet onions; seafood flavor married to earthy veggies and olive oil in a pot full of comfort.

Ingredients

  • 500g mussels
  • 250g long-grain rice
  • 550ml water for the rice
  • 2 onions, sliced into rings
  • 2 bell peppers, sliced into rings (mixed colors)
  • 2 tomatoes, finely chopped
  • 4 tablespoons olive oil
  • 1 garlic clove
  • 50ml water for the sauce
  • Sweet paprika
  • Salt
  • Pepper
  • 1 teaspoon oregano

Rice Preparation

  1. In a pot, add the water, a pinch of salt, 1 tablespoon olive oil, and the rice.
  2. Cook over medium heat for about 20 minutes until the rice is tender and has absorbed all the liquid.

For the Mussels

  1. In a separate pot, heat the olive oil and sauté the onions, garlic, and bell peppers until slightly softened.
  2. Add the tomatoes, salt, pepper, paprika, oregano, and the additional water. Simmer for about 15 minutes until the vegetables are tender.
  3. Finally, add the mussels, stir gently, and cook for an additional 3-4 minutes.
