Ingredients
- 300g shrimp
- 3 ripe tomatoes, crushed
- 1 carrot, grated
- 1 red bell pepper, finely chopped
- 4 tablespoons flour
- A little parsley, finely chopped
- Olive oil for frying
Instructions
- Bring a small pot of water to a boil. Once boiling, add the shrimp and cook for 2 minutes. Drain immediately.
- Chop the shrimp into small pieces and place them in a bowl. Add the tomatoes, carrot, red bell pepper, parsley, salt, and flour.
- Mix well until all ingredients combine into a light batter that isn’t too runny. Add a bit more flour if needed.
- Heat olive oil in a pan over medium heat.
- Once the oil is hot, drop spoonfuls of the batter into the pan.
- Fry the fritters on both sides until they turn a golden color.
