Ingredients

  • 300g shrimp
  • 3 ripe tomatoes, crushed
  • 1 carrot, grated
  • 1 red bell pepper, finely chopped
  • 4 tablespoons flour
  • A little parsley, finely chopped
  • Olive oil for frying

Instructions

  1. Bring a small pot of water to a boil. Once boiling, add the shrimp and cook for 2 minutes. Drain immediately.
  2. Chop the shrimp into small pieces and place them in a bowl. Add the tomatoes, carrot, red bell pepper, parsley, salt, and flour.
  3. Mix well until all ingredients combine into a light batter that isn’t too runny. Add a bit more flour if needed.
  4. Heat olive oil in a pan over medium heat.
  5. Once the oil is hot, drop spoonfuls of the batter into the pan.
  6. Fry the fritters on both sides until they turn a golden color.
